Correct tampering is a basic requirement when preparing espresso.

During the covering process, oils, fats, flavours and other aromas are extracted from the ground material in the sieve carrier. The tamper enjoys an often underestimated and extremely important function here and is responsible for the perfect compression of the coffee grounds in the sieve.

The more thoroughly you prepare the coffee puck, the better the espresso will succeed. With a perfect coffee puck, the hot water passes through every point in the sieve, since it meets the same resistance everywhere and the extraction from the entire coffee grounds is therefore evenly successful.
